High elevations, rich soils, and traditional shade canopy combine to create exceptionally dense cherries and complex cup profiles.
Rabinal & Cubulco, Baja Verapaz
Situated between 1,600 and 1,750+ meters above sea level (masl), Rabinal and Cubulco experience warm sunny days and cool mountain nights. This drastic diurnal temperature shift slows cherry maturation, concentrating natural sugars within the bean. Smallholder producers in these regions tend small family parcels with painstaking care, utilizing spring water for washed process fermentations and sun-drying parchment on raised wooden beds.
